For over 30 years, High Weald Dairy has been crafting exceptional artisan cheese in the heart of Sussex. Using traditional cheesemaking techniques and carefully sourced milk, they have earned a reputation of one of England`s most respected independent Cheesemakers making them the perfect partner for our MIINT Luxury Hampers.
Organic Brighton Blue (Cow): Strength 2 Creamy , Crumbly, Mellow, Salty. A mellow blue. The cheese is aged in the maturing rooms for 6-8 weeks allowing the blue veins to develope and add distinctive flavour. Well rounded cheese that doesn`t overpower the palette.
Organic St Giles (Cow): Strength 3 Semi Soft ,Buttery. Smooth creamy cheese is made using the curds washed process named after the church in Horsted Keynes where the dairy is based.
Organic Chilli Marble (Cow): Strength 3 Semi Soft ,Chilli Red Bird eye chilli seeds added to the cheese to give the cheese a warm kick. The buttery flavour of St Giles comes through first followed by heat.
Organic Tremains (Cow): Strength 3 Cheddar style, hard , smooth, creamy. This cheese is named after the farm where the cheeses are made. Local organic milk is aged in the maturing room for over 6 months. The cheese is a classic firm texture and a delicious well rounded bite of flavour that one expects with a medium to strong traditional cheddar.
